Quick & Easy Lentil Soup

This soup is such a lifesaver and a crowd pleaser. And is incredibly healthy! Lentils are full of iron and the soup is full of nutrients that pacify Vata and Kapha.

Ingredients:

1 yellow onion chopped

2 medium carrots chopped

1 zucchini chopped

2 bay leaves

2 tbsp olive oil

2 cups vegetable stock

2+ cups of filtered water

2 cups of lentils (I usually use organic green lentils but any will do)

1 can unsweetened coconut milk

Directions:

  1. In a medium/large pot add olive oil and cook over medium/medium high heat.

  2. Add onion, carrots and zucchini when oil is sizzling (about 2 minutes). Cook for 5 minutes.

  3. Add lentils, bay leaves, veggie stock and enough water to cover everything.

  4. Cook for 20-30 minutes until all ingredients are tender.

  5. Add coconut milk during the last 5 minutes and stir.

  6. Season with sea salt and pepper and enjoy!
