Detoxing Kitchari Recipe

Kitchari is a delicious Ayurvedic dish that is used to detox the body. It is nourishing, simple and very easy to digest. This recipe is best made with seasonal, local ingredients and can change slightly depending what time of the year you make it and what your unique metabolic needs are.

If you are more prone to anxiety and a high metabolism, you are going to want to use more ingredients that are a bit more dense like root vegetables and adding more ghee.

If you are more prone to depression and a sluggish metabolism, you are going to want to use ingredients with quicker energy like peppers, brussell sprouts and eggplant.

If you are more prone to anger or acid reflux and a moderate metabolism, using using cooler ingredients like spinach, kale and celery will balance out the body.

This meal can be eaten for breakfast. lunch or dinner and can be modified to meet any of your body’s needs.

Ingredients:

1/2 Small Butternut Squash, peeled and chopped

2 Small Zucchini chopped

2 Medium Carrots chopped

4 Cups of Raw Spinach

2 tsbp Fresh Ginger

1 Cup of Mung Dahl or Red Lentils

1/2 cups of Farro, Basmati Rice or Quinoa

2 tbsp Ghee

1 tsp each: Turmeric, Fennel, Coriander, Cumin

Sea Salt and Black Pepper to taste

Directions:

In large pot, heat ghee on medium heat.

Add cumin, fennel and coriander once ghee starts to pop.

Add turmeric and ginger.

Add Butternut Squash and Mung Dahl and stir altogether.

Add 5 cups of filtered water and let simmer for 20 minutes.

Add other vegetables and grains.

Add 1 cup of water or more if needed.

Cook all until soft, about 20-25 minutes. Season with Sea Salt and Pepper.
