B-fast for lunch + Watery coffee revival

One of my favorite meals to make is breakfast for lunch. LOVE eggs. They are, in my opinion, the perfect food. Protein, omega 3 fats, choline- and they're delicious. Today I made an egg scramble with veggies and parsley. Nothing too gourmet. Healthy, delicious comfort food.

To make this meal even better, I invented a way to enjoy my watered coffee from yesterday (no one likes wasting- thanks for the lesson, Nanny). P.S. I have been off caffeine for about 2 weeks now which is why I have opted for decaf and I feel absolutely amazing! Lately, before I have a boxing session I have been wanting something to give me a little kick in the ass and curb my hunger without actually eating anything solid (so I don't throw up all over my coach, Andrew, who rocks btw). So yesterday I bought a decaf iced coffee. I drank only 3 sips and somehow ended up bringing the rest of the watered down coffee home. BEST IDEA EVER. I saved it and today I made the best drink out of it. 

How easy is this to make? So easy. Here's what I did:

MEAL:

  • Sautee in 1 tbsp coconut oil: shredded cabbage, chopped mushrooms, frozen spinach, chopped parsley

  • Season with sea salt and pepper

  • Remove veggies and add another tbsp of coconut oil to pan

  • Add 1 full egg and 2 egg whites to pan and cook until crispy.

DRANK:

  • Blend watery iced coffee (I added a little whole milk to it originally), 1/4 cup almond milk, 5 iced cubes, 1 tsp vanilla extract and 1 tbsp cinnamon. A mazing.
